Yummy Dinner

What we had for dinner tonight is making into the blog, yes it was that good.

This meal received a 5 out of 5 kid rating.. you read that right, ALL of my kiddos ate it without any coercing from me.

Southwestern Chicken Soup
with
Avocado Salad

Southwestern Chicken Soup
Ingredients:
1 t olive oil
1 small onion, chopped
2 garlic cloves minced (we use the jarred minced garlic)
Rotisserie Chicken, meat removed & shredded
16 oz can pinto beans, rinsed & drained (think this would be good with black beans too)
14.5 oz can diced tomatoes, undrained
14 oz can chicken broth
12 oz frozen corn, thawed (or not)
4.5 oz can chopped green chilies, undrained
1/2 t chili powder
1/2 t cumin
8 oz sour cream (optional)

Heat oil in Dutch oven over medium heat. Add oinion and garlic, saute 2-3 minutes, add chicken, beans, tomatoes, broth, corn, green chilies, chili powder and cumin. Bring to a boil, reduce heat. Simmer 15 minutes, Ladle into soup bowls, top with sour cream (or not).

Avacado Salad
Ingredients
2 avacados, peeled & sliced
2 roma tomatoes, sliced
12 oz bag chopped lettuce
Lemon juice
salt and pepper to taste

In large bowl, combine avocados, tomatoes and lettuce. Drizzle with lemon juice, season with salt and pepper.

So simple, so YUMMY!

For me, school starts back up tomorrow.

I'm taking three classes this semester, but I have them staggered so that

I'm not taking all three at the same time.

The window seat is finished, and the playroom is almost complete, I will put up pictures when it is.

This week I hope to get my house back in order, and help these toys find their homes.

Here is hoping that everyone stays healthy this week and the snow doesn't cancel school, so I can get stuff done.

and might I add, BRRRRRRR!

To Match or To Not?

When I was pregnant with Hosea and Micah, one question that I was asked a lot was
 “Are you going to dress them the same?”


To this I would answer, no I’m not, maybe sometimes on special occasions or for pictures but not on a daily basis.
However as they have grown I have found that I do dress them the same, maybe not the exact same outfit, but usually the same thing just in a different color. Their closet is organized around outfits, their pants are all hung up, two to a pant hanger, and their shirts are all put in so that the matching shirts are next to each other.
This was not something I meant to do. Before they were born, I was sure I was going to not dress them alike, I was going to let them have their own clothes and each their own personality and not try and make them be like their brother, but along with some other things I meant to do, that went out the window when they arrived.

I think the thing I find the hardest is that I want them to both be equals, I don’t want one to be cuter than the other, or to be dressed in newer clothes, and since there are older brothers and cousins there are a lot of hand me down clothes, although not a lot of doubles there. I’m going to go out on a limb and say I know it sounds crazy, and maybe you just can’t understand unless you are a mother of multiples.
I know that one day they will not want to dress alike, and I will be ok with that, because then they will be old enough to choose their own style and have their own opinion and be able to express their individuality. Until then I’m going to keep coordinating their clothes and dressing them alike, except for today, which was a rare occasion.


Because I’m the mom, and I can.
On a side note, I think my boys were born to be models, they followed instructions so well and they love having their picture taken, I bet you can’t tell in these that just seconds before I took my camera out to start shooting Hosea was bawling because Micah took his toy.

Seriously, if anyone needs models let me know.

{Embrace the Camera}

 
 
Thursdays are usually my day to just relax, with nowhere to go until after lunch, we all just usually stay in our pajamas.

 
 
So today you get a picture of me raw, with no makeup (not that rare), and my hair up in a hurried pony tail and in my jammies.
I was just trying to block the sun from my eyes, but kind of liked the way it turned out

And then Princess came to get in the pictures too

Worn out Wednesday

Worn out, did so much running around today.


Work out,

Kid’s school,

Bank,

Home,

My school to buy books,

Drive across town for lunch,

Back to kid’s school to pick up boys

Then to the other side of town to go to Target

Then finally home.

Avrah was feeling better but not allowed to go back to school yet, so she ran around with me today, and then she was able to go to her first official dance class, so excited about posting pictures of her dancing in the future.

Dinner was AWESOME

Then CGY (Common Ground Youth)

Now home and to bed

Two Things Tuesday

1) My little Princess was sick today, it kind of threw a wrench in my plans, but I adapted and she is feeling better now.

2) I had the pleasure of spending the evening with some great ladies. My TMOMs meetings are always a blast.
